Blue cheese, ham and potato tortilla


You can make a tortilla with practically anything you fancy (ham and mushroom, pea and ham, red peppers and onion, any cheeses) providing you have eggs.. it is versatile as can be eaten hot or cold, will keep till the following day and can be a main meal or snack. The hubby and I will have it for lunch, as he is working until late, but then have a light meal this evening.

For two people, I used…

  • 4 eggs
  • 1 red onion
  • 1/2 red pepper
  • Ham
  • Handful of partially boiled new potatoes
  • 56g blue cheese (heA or 6 syns)
  • Black pepper
  • Frylite

Using frylite, place onions, potatoes, ham and red peppers in a frying pan and fry them gently until they begin to colour and soften.

Add beaten eggs, season with black pepper,  then gently mix ingredients together, allow a few minutes until eggs looks set.

I gently split the mix at this point by running the spatula down the middle of the the pan to make cutting the portion easier and ensuring my cheese portion is measured. Add the cheese, I used blue cheese so did not season eggs with salt, then transfer the pan to the grill and allow the top to crisp and colour and the cheese to melt.
